Banana Muffins


These are by far the BEST muffin I have ever made..... wholesome & yet unbelievably yummy.  Best of all, it is super easy to make.  So, here you go.... the Absolutely Divine Banana Muffin! 



Method
  1. Soften the butter @ room temperature for approx. an hour
  2. Toast walnut at 120C for 8 ~ 10mins.  Set aside to cool.
  3.  Sieve flour, baking powder, baking soda & cinnamon powder together.  Set aside
  4. Peel off banana skin & coarsely chop banana (DON’T OVER MASH)
  5. Cream butter & sugar till it light & fluffy
  6. Beat in eggs, one at a time.
  7.  Add the sour cream, mix well
  8.  Fold in the flour.  Careful not to over mix.
  9.  Add the coarsely chopped banana into the flour mixture. Scoop into muffin tins.  
  10.  Bake @ preheated oven @ 180C for 25 ~ 30mins.

180g         Butter                                     
120g         Brown Sugar                           
2 Large     Eggs                                       
230g        Flour                                        
1 tsp        Baking Powder                      
3/4 tsp     Baking Soda                           
1/2 tsp      Cinnamon Powder (optional)
700g       Banana (inclusive of skin)                  
50g        Sour Cream/Yogurt/                
              Whipping Cream         
3/4 tsp    Vanilla Extract                        
1/4 tsp    Salt                                         
80g         Chopped Walnut
