Madeleines ... Remembrance of Things Past


Madeleines, made famous by Marcel Proust's novel Á la recherche du temps perdu (Remembrance of Things Past) where a taste of the small petit fours sec plunges the narrator back into his childhood. Since then, Proust's madeleine has become a metaphor in France for anything that sparks fond memories.These delicate buttery little plump cakes are perfect treat for afternoon tea party. Enjoy them plain, or dipped in your tea or coffee, they are simply delightful.
Here's a really simple recipe to make your own French Little Madeleines.

Ingrediants
200 gm
cake flour
1 tsp baking powder
140 gm castor sugar
4 eggs
1 lemon zest
200 gm melted butter

1. Beat eggs with sugar until light and fluffy.

2. Add in sifted flour and baking powder. Mix well.
3. Than add lemon zest and melted butter. Mix well.
4. Cover with a cling wrap and refrigerate for at least 1 hour or overnight.
4. Spoon the batter into well greased Madeleine moulds.

Preheat oven to 180C and baked for about 15 mins until brown. Unmould and leave on rack to cool. Best eaten on the same day, which is never a problem in our house.
